Wolfberry wine chicken (杞子紹酒鸡) Recipe

- 2 Chicken drumsticks chopped into 3 pcs each
- 2 tbspn wolfberry
- 5 tbspn chinese xiaoshing wine
- Half tspn salt
- Few slices of old ginger
Instructions
Soak wolfberries in chinese xiaoshing wine for 20 minutes or until wolfberries turn soft
Marinade chicken pieces with salt for 5 minutes, place ginger slices on top and underneath chicken pieces
Bring steamer to boil, pour soaked wolfberries along with liquid into chicken pieces, place into steamer to steam for 10minutes over medium heat. Turn off heat, let sweat for 5 minutes. Check if chicken has cooked thoroughly , steam for few more minutes if necessary.
Needn’t add water into chicken pieces, the evaporation during steaming will increase the amount if liquid into the dish
