Don @ Japanese rice bowl dish, is an eminent meal to Japanese. The simplicity of this dish and also it’s effortless preparation, catches tremendous attention and interests of other asian countries and western. The two most heard Dons are Oyako don and Unagi don.
The best part of cooking Japanese rice bowl dish, is it’s wide varieties of ingredients to choose from seafood, meat, and vegetables, to cooked with and served over rice. Not to forget, the essence which make this dish so satisfying is the sauce used.
A typical sauce mixture to cook don, consist of dashi, soy sauce and mirin. Few seafood toppings requires other sauces such as teriyaki or bbq sauce. A good example of don which call for this type of sauce is Unagi ( grilled freshwater eel).
For additional nutrients, it’s good to include greens of your choice, and of course the protein-rich eggs. Be it omelette, sunny side up or Onsen tamago (soft boiled egg), it’s your call.

• Main Ingredients :
• eel (fresh or frozen or ready marinated)
• eel sauce (opt this out if the eel is already marinated)
• 2 eggs
• handful of thinly sliced french beans
• Ingredients to make Smooth Omelette:
• 2 tbspn milk
• 2 eggs
• 2 dashes of white pepper
• half tspn salt
Beat all ingredients into eggs and set aside for bubbles to subside/ scoop bubbles out
Heat pan over high heat with olive oil and then turn heat to small. Panfry omelette over small heat , fold when its ready (do not burn it)
Fold when its ready ( when the underneath is cooked but centre part is still runny)
Set cooked omelette aside and let cool
Stir fry french beans with olive oil, half tspn of huatiao, and a pinch of salt, over medium heat
PanGrill unagi over medium until its cook (may also use air fryer or oven)
Julienne the omelette
Top all three main ingredients on fragrant white rice, side with unagi sauce and mixture of roasted sesame sauce and mayoinnaise. ENJOY !
