Yesterday, I ran into these beautiful bunches of garlic scapes at supermarket. Then i was thinking, why it never cross my mind to make use of this tasty ingredient to cook for my family. Especially for my girls, age 5 and 3 respectively, both of whom, are very fond of stir fried garlic. I’m sure they will like to have a taste of garlic scape too. Hence, I decided to whip up a simple yet delicious dish….”Stir fried pork cubes with garlic scapes”.
WHAT IS GARLIC SCAPES?
Garlic Scapes is the flower bud of a garlic plant, which can be eaten either raw or cooked. It has a garlicky and oniony flavour, which tastes lighter but more savoury than garlic and onion itself. In addition, garlic scapes has a delicious , and very addictive tender-crisp texture. You WILL devour this dish with bowls, and BOWLS of fragrant rice…this dish sure is an official “rice thief”!
You’ll find garlic scapes widely used in Chinese cuisine, particularly for grilling meat, stir-fries, sautéing, and in soups, just to name a few. Western cuisine too, has it’s creative ways of using garlic scapes. In fact, there are quite a number of recipes which call for blended garlic scapes in the making of pestos or dips, as one of the way to impart it’s garlicky and oniony flavour into their dishes.
Other than above mentioned, garlic scapes is also a great alternative for raw onions in a bowl of salad.
HOW TO PREPARE GARLIC SCAPES?
The preparation is not an easy one, I should say. That’s because you GOTTO peel off the outer layer of each strands prior to cooking. Else, you won’t get it’s tender-crisp texture. Trust me, it’s worth doing it, and of course best when you are catching up your favourite soap opera.😂
Do not skip this step unless you don’t mind “chewing off rubber”.. cos that is how it’ll be. And In spite of the rubbery texture which the garlic scapes’ bud also gives, many would still opt to include in, instead of discarding it.

Stir fried pork cubes with garlic scapes recipePrint This
Heat wok with 1 tbsp of Olive Oil, stir fry garlic scapes for 30 seconds, dish out and set aside.
Sear and brown pork cubes with the garlic scapes-infused oil.
Put in garlic scapes including buds (this is optional, may discard buds if you do not want rubbery texture), stir fry for another 30 seconds
Add in oyster sauce
Drizzle light soy sauce from the side of wok, then add in red chilli, immediately turn off heat and give it a quick toss
Dish out and serve with fragrant white rice
Tips: In order to achieve the tender - crispy texture, garlic scapes needs peeling prior to cooking. The time spent on peeling each strand is worthy, else, the texture will be rubbery.
