Melt butter in pan over medium heat.
Add in curry leaves and let fry till fragrant.
Place in mashed salted eggs and minced garlic, turn heat to low and stir fry for 1 minute.
Add rinsed bitter gourd, let cook over medium heat for 2 minutes then low heat for another 2 minutes.
Pour in chicken stock, turn heat back to medium and bring to boil , then low heat again to simmer for another 3 minutes.
Turn off heat and slowly stir in eggs
Garnish with chopped chilli paddy
