Scald meat with boiling hot water for 5 minutes, set aside.
Place all ingredients except watercress and wolfberries into pot of water, bring to boil for 5 minutes.
Cover pot and simmer for 45 minutes.
Add in watercress and wolfberries and let simmer for another 15 minutes.
Serve hot with rice, watercress soup is known for it goodness in reducing inner body heat. Enjoy! 🙂
