Lightly beat eggs and add in sauce mixture

Fry eggs, slowly stir to make omelette , do not overcook

Heat oil in pan and stir fry tomatoes

Add in ketchup, sugar, and constarch liquid. Turn off heat,  Gently Mix in omelette into cooked tomatoes. Quickly scoop out and serve hot

Instructions

  • 1. Heat oil in wok/pan over high heat, brown onion and spring onion until fragrant
  • 2. Pour in egg mixture, turn heat to low to medium, slowly stir to make the omelette. Do not overcook
  • 3. Scoop out and set aside
  • 4. Heat oil in pan over high heat, stirfry chopped tomato for 1 minute.
  • 5. Add sugar, ketchup, and cornstarch liquid then turn heat to medium. Let cook for 1 minute. Turn off heat, stir in eggs quickly but gently. Serve hot
