Stir fried bitter gourd with salted eggs

Ingredients

Melt butter over medium heat

Pan fry curry leaves till fragrant

Add in salted eggs and minced garlic

Place in bitter gourd

Pour chicken stock into pan and let simmer

Turn off heat slowly stir in chicken egg

Instructions

  • 1. Melt butter in pan over medium heat. Add in curry leaves and let fry till fragrant. Place in mashed salted eggs and minced garlic, turn heat to low and stir fry for 1 minute. Add rinsed bitter gourd, let cook over medium heat for 2 minutes then low heat for another 2 minutes. Pour in chicken stock, turn heat back to medium and bring to boil , then low heat again to let simmer for another 3 minutes. Turn off heat and slowly stir in chicken eggs, best to avoid clump (in this photo you'll see that my eggs are clump because my egg yolks aren't mashed well and I forgot to turn off heat before Stirring in the chicken egg).
  • 2. Garnish with chopped chilli paddy
