Steamed emperor herbal chicken

Ingredients: Chicken drums (or whole chicken if you need bigger servings ) , mushrooms, chinese wine sausage, chicken stock cube, prepacked emperor herbal chicken spices and herbs, hsiao xing wine

Bring 500ml water to boil, place in herbs (except wolfberries and spices) and let boil for 5 minutes then simmer for 10minutes

Add in 1/2 chicken stock cube, continue simmer for a minute

Rub spices onto chicken, arrange it onto HDPE paper, sprinkle soaked mushrooms slices, sliced chinese wine sausage and wolfberries on top chicken drums, and pour in 2 tbspn hsiao xing wine

Place boiled herbs on top

Ladle in the herbal soup

Wrap and twist tight (band up)

Wrap with foil

Heat steamer, place foil wrapped chicken into steamer, cover pot and let cook for first 5 minutes on high heat, then steam for 1 hour over very  low heat

Serve hot with fragrant rice

Instructions

  • 2. Add in half cube chicken stock and continue simmer for another 1 minute
  • 3. Meanwhile rub the spices onto chicken drumstick
  • 4. Arrange chicken drums on to Hdpe paper, top it with wolfberries, mushrooms, chinese sausage, and hsiao xing wine
  • 5. Place boiled herbs onto chicken, and add in boiled herbal soup (use all the amount of soup)
  • 6. Wrap and twist tight with hdpe paper (make sure chicken is fully immersed into the soup) follows with a layer of foil
  • 7. Placed into heated simmer, let cook for 5 minutes over high heat then simmer for 1 hour with very low heat
  • 8. Serve hot with rice
