Smooth egg gravy on silver needle noodles

Ingredients to stir fry silver needle noodles : noodles, 1tbspn minced garlic, handful koochye (optional)

Heat olive oil on pan over medium heat, brown garlic for 15 seconds

Add noodles, and 1 tbspn ligh soy, stir well

Pour in 1 tspn dark soy, continue to stir

Add Koochye and give it a quick toss, set aside

Ingredients for smooth egg gravy : 2 eggs, half box soft tofu, 1 tbspn minced garlic, handful kailan, handful spring onion, 1 cup of can abalone liquid (optional, use for optimal taste) , 50g sliced pork , 4 medium prawns deshelled , 1 tbspn potato starch

Heat olive oil and sesame oil in deep pot over medium heat. Brown spring onion for 30 seconds

Add pork and minced garlic,let sear for 15 seconds

Add 1.5 tbspn oyster sauce

with half tspn huatiao, stir fry for 30second, add 3 tbspn water

Place prawns into, and continue cook for another 30seconds

Pour in abalone liquid (may replace this with chicken stock)

and 750ml water , turn to high heat and bring to boil

Put in the rest of veges and spring onions

Turn off heat , slowly drip in eggs thru a chopstick then gently but quickly stir it into the gravy, this method ensures no thick clump of eggs

Place in soft tofu

 

Egg gravy is ready, ladle on noodles and serve.
