Instructions

  • 1. FOR SOUP:
  • 2. Add anchovies and soya beans into water in deep pot
  • 3. Bring to boil. Turn heat to low simmer for 20mins. Then add salt
  • 4. Let steep meanwhile proceeding to make dough
  • 5. ** If include pork bone, broth need to be simmered longer at least 45mins. (Optional)

  • 7. FOR DOUGH:
  • 8. Mix ingredients in big mixing bowl
  • 9. Slowly incorporate water into mixture
  • 10. Knead dough until smooth and even colour
  • 11. Cover and let rest in fridge for at least 30mins
  • 12. Divide dough into 4.
  • 13. Roll it flat and thin
  • 14. Cut into desired size or bite size for cooking
  • 15.
  • 16. FOR MINCED MEAT SAUCE :
  • 17. Heat oil in pan over medium heat
  • 18. Brown shallots for 1 minute. Add garlic continue brown
  • 19. Place in ground pork and add chinese cooking wine
  • 20. Toss in black fg and mushrooms. Stir well
  • 21. Pour in the rest ingredients (sauces,sugar,pepper,5 spice)
  • 22. Stir fry for 2 minutes. Add cornstarch. Mixwell
  • 23. Dish out and set aside
  • 24.
  • 25. PREPARING BOWL OF EGG NOODLE SOUP:
  • 26. Scoop a bowl of cooked soup into a small pot
  • 27. Bring to boil
  • 28. Add in sliced noodle and spinach
  • 29. Let cook for 1 minute
  • 30. Add egg, continue cook for 30 seconds
  • 31. Turn off heat
  • 32. Serve hot in bowl add spoonful of cooked minced meat
  • 33. Garnish with fried anchovies and shallots
  • 34. Drizzle some sesame oil (optional)
