Fish head beehoon soup 鱼头米粉

Instructions

  • 1. Prepare fish for frying, heat oil in deep pan over medium heat, fry fish until golden brown, sieve and set aside. Meanwhile frying the fish, soak half pack of vermicelli in hot boiling water for 10minutes (portion to serve 4)
  • 2. Heat olive oil in a deep pot over medium heat, brown ginger until fragrant
  • 3. Toss in mustard greens and tomatoes, give it a quick stir
  • 4. Place in some of the fried fish, (you may want to leave some aside until serving time for it's crispness)
  • 5. Add 1000ml water, bring to boil and turn heat to low to simmer for 10 minutes
  • 6. Place in chicken stock cube, continue simmer for a minute
  • 7. Turn off the heat, add in evaporated milk, gently stir then follow by tofu cubes
  • 8. Cover pot and let sweat for another 2 minutes prior to serving
  • 9. Arrange beehoon in a bowl and ladle in soup with other ingredients
  • 10. Slurp it hot and milky! Enjoy
