Crispy deep fried pork belly
THE MANY WAYS to make deep fried food extra crispy?
– Mixed cornflour, potato starch and all purpose flour as powdery batter
– Add egg yolk as medium to hold flour batter strongly to the meat, taste better too
– Include bread crumbs
– Give fried food a quick double fry
350g of thick cubed pork belly
Marinade consists of : half tspn salt, 1 tspn of “foodstuff.co” spices (meant for deep fried and or roasting marinade) , a drizzle of sesame oil, dashes of white ground pepper, and half tspn huatiao
After mixing all spices and sauce into pork belly, poke meat with fork, doing this you can fry it right after, need not keep in fridge prior to frying
Break one whole yolk and mix well into meat
Dab 2 tbspn potato starch onto pork belly, for added crispness, you may also opt to include bread crumbs (which I opt out for this time)
Heat oil over high heat, when it bubbles (chopstick test) put in pork belly , turn heat to medium and fry till golden brown. Sieve meat, turn heat back to high let it bubbles again, then return meat into the hot oil for a very quick second fry. This will makes it more crispy
Start chow down this crispy pork as tv snacks or with rice.
