Instructions

  • 1. Scald trotters in boiling water with ginger for 5 minutes. Then rinse with running water and set aside.
  • 2. Heat sesame oil in deep pot over medium heat.
  • 3. Then add in ginger and let brown over medium, place in garlic cloves (both, crushed and skin on) comtinue let brown until fragrant
  • 4. Toss in cinnamon, dried chillies,star anise and cloves, sear for 2 minutes over lowest heat
  • 5. Add in boiled trotters, turn heat to medium then pour xiaohsing wine over it, give it a quick stir
  • 6. Pour in the sauce mixture and mix well. Let sear for 30 seconds then add in 500 ml of water and rock sugar. Cover pot and Bring to boil (neednt fully immerse the trotters as it will shrink during braising, the sauce need to be concentrated enough to seep into meat for deep flavor)
  • 7. Turn heat to lowest and let simmer for a total of 1.5 hours
  • 8. Check occasionally not to burnt it as liquid reduces in the process, add in 80ml water every 20 to 30minutes
  • 9. In the end, check the taste and consistency of sauce. Adjust to your own taste. Add small amount of water if required.
