Heat 1 tbspn olive oil on pan over medium heat
Brown onions and Chinese sausage with half tspn salt and minced garlic. Set aside
Whisk eggs in a bowl. Then mix eggs with spring onion, fried shallots, browned Chinese sausage and onions, remaining salt and pepper. Stir gently until eggs are mixed well with all ingredients
Heat pan with small amount of olive oil over medium heat
Turn heat to low and pour mixture into pan. Flip when it’s browned and make sure the other side is cooked. Size of omelette is own preference. You can make a big one with this whole mixture using a big pan.
Serve hot with rice
